Grilled Corned Beef Supper

Vince and I are slowly attempting to resurrect our social life. We're easing back into small gatherings, mostly casual dinners with one or two close friends. As much as we (actually, mostly me) long to have a party with a house full of people, we're both come to appreciate the intimacy of sharing a delicious meal with good conversation and laughter that can only be achieved in a small group setting.
With extra time on my hands, I've been able to experiment with a bunch of different recipes. This week, I'd like to share three of my favorite new entrees. All use mostly pantry ingredients, are easy to prepare and very delicious. Happy Cooking!
Even though it sounds fancy, dining al fresco just means eating outside. And since we're becoming a bit more social while we're social distancing, eating on the deck has started to become part of our quarantined routine. Vince and I had two of our besties over for dinner last week for a Greek style picnic supper. The entree was Grilled Pork Souvlaki with Dilly Cucumber Sauce from my cookbook, Celebrate Beaufort. The side dishes were new creations and I'm sharing them all with you.
If we have to be “sheltering in place” there's no place better than the South Carolina Lowcountry. The spring weather has been beyond spectacular! Vince and I have spent most of our evenings cooking on the grill and eating on the deck. We've also been enjoying my salad, side dish and sweet treat experiments. I've recently been reminded just how nice it is to have a tupperware dish filled with a delicious something-something in the fridge to snack on. All three recipes this week are excellent sides with grilled foods and they're also great leftovers. Enjoy the fresh air and sunshine, my friends. And, be sure to Celebrate Everyday. xox
The most fun I've had since this whole social distancing business started has been delivering little surprise treats, breads and casseroles to our friends. Every few days, Vince plays chauffeur and drives Miss Debbi to drop off goodies on the front porches of dear chums that we have been missing terribly. More often than not, we've all been able to chat (within a safe distance of six feet or more), laugh a bit and see each other's smiles. That's how Vince and I are getting through these “unsettling times.” My mama believed that food was love and that it could solve all of the troubles of the world. I guess the apple didn't fall too far from the tree, and that's a good thing.
